  • 4 cups green cabbage, thinly shredded
  • 2 cups red cabbage, thinly shredded
  • 2 medium carrots, grated
  • ½ cup fresh cilantro, chopped
  • ½ cup mayonnaise
  • ¼ cup sour cream or plain Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Thinly shred the green and red cabbage using a sharp knife or mandoline slicer. Grate the carrots and chop the cilantro. Place all the vegetables in a large mixing bowl.
  2. In a medium bowl, whisk together the mayonnaise, sour cream, lime juice, honey, smoked paprika, chili powder, garlic powder, salt, and black pepper until smooth and creamy.
  3. Pour the dressing over the vegetables and toss everything together using tongs. Make sure every piece is coated evenly with the dressing.
  4. Taste the coleslaw and adjust the seasoning if needed. Add more lime juice for tanginess or a pinch of chili powder for extra spice.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Before serving, give the coleslaw a quick toss to redistribute the dressing.
