  • 1 cup shredded mozzarella cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)

  • 2 tablespoons chopped green onions (for garnish)
  • 1/3 cup mayonnaise
  • 1/4 cup buttermilk
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon black pepper
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  2. In a small bowl, whisk together mayonnaise, buttermilk, dried dill, dried parsley, garlic powder, onion powder, black pepper, and a pinch of salt to make the ranch drizzle. Cover and refrigerate.
  3. Shred the cooked chicken into small, bite-sized pieces using two forks. You should have about 2 cups.
  4. In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and fluffy (about 1 minute). Add sour cream and beat until combined.
  5. Add buffalo hot sauce, garlic powder, onion powder, smoked paprika (if using), and a pinch of salt and pepper. Mix until evenly incorporated.
  6. Fold in the shredded chicken, 3/4 cup cheddar cheese, and 3/4 cup mozzarella cheese until evenly distributed.
  7. Spread the mixture into the prepared baking dish. Sprinkle the remaining 1/4 cup cheddar and 1/4 cup mozzarella on top.
  8. Bake for 20-25 minutes, or until hot and bubbly and the cheese on top is melted and golden. Optionally, broil for 1-2 minutes for a deeper golden top.
  9. Remove from oven and let rest for 2-3 minutes. Drizzle the ranch dressing over the top in a zigzag pattern. Sprinkle with chopped green onions.
  10. Serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.
