  • 2 pounds Yukon Gold or red potatoes, cut into bite-sized chunks
  • 6 slices thick-cut bacon
  • 1 cup sharp or extra-sharp cheddar cheese, freshly shredded
  • 1/2 cup sour cream (full-fat preferred)
  • 1/2 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 3 green onions, thinly sliced
  • 2 tablespoons fresh chives or parsley, chopped
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash and cut the potatoes into bite-sized chunks, leaving skins on if desired. Toss with a little olive oil, salt, and pepper.
  3. Spread the potatoes evenly on the baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and golden brown on edges.
  4. While potatoes roast, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and chop into small pieces.
  5. In a small bowl, whisk together sour cream, mayonnaise, yellow mustard, apple cider vinegar, salt, and pepper. Adjust seasoning to taste.
  6. Once potatoes are cool but still warm, transfer to a large mixing bowl. Add bacon, shredded cheddar, sliced green onions, and chopped chives or parsley.
  7. Pour the dressing over the potato mixture and gently fold to combine, keeping the potatoes intact.
  8. Chill the salad for at least 1 hour before serving to let flavors meld and the salad firm up.

Notes

Roasting potatoes instead of boiling gives a better texture and flavor. Cook bacon until very crisp and drain well to avoid sogginess. Gently fold salad to keep potato chunks intact. Chill at least 1 hour or overnight for best flavor. Keep bacon and cheese separate until serving to maintain crispness.
