  • 810 corn tortillas, cut into strips or triangles
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 medium onion, finely chopped
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Optional: Fresh cilantro for garnish
  • Optional: Sliced jalapeños for extra heat

Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13-inch casserole dish with butter or cooking spray.
  2. If using raw chicken breasts, poach in simmering water for about 15 minutes until cooked through, then shred. If using rotisserie chicken, shred and set aside.
  3. Finely dice the onion and drain the diced green chilies.
  4. In a large bowl, combine cream of mushroom soup, cream of chicken soup, sour cream, chicken broth, garlic powder, chili powder, smoked paprika, salt, and pepper. Stir until smooth.
  5. Add shredded chicken, chopped onion, and green chilies to the sauce mixture and stir gently to coat evenly.
  6. Layer half of the tortilla strips in the bottom of the casserole dish. Spread half of the chicken mixture over the tortillas, then sprinkle with 1 cup of shredded cheddar cheese.
  7. Repeat layers with remaining tortillas, chicken mixture, and cheese.
  8. Cover casserole loosely with aluminum foil and bake for 25 minutes.
  9. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  10. Let casserole rest for 5-10 minutes before serving. Garnish with fresh cilantro and sliced jalapeños if desired.

If casserole looks dry after first 25 minutes, drizzle extra chicken broth around edges before uncovering. Warm tortillas slightly before layering to prevent toughness. Covering with foil helps retain moisture and prevents overbaking. For extra crispy top, broil 1-2 minutes at end of baking, watching closely to avoid burning.
