  • 2 (15-ounce) cans of chickpeas, drained and rinsed
  • 2 tablespoons unsalted butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons tomato paste
  • 1 (14-ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Naan or rice for serving

Instructions

  1. Finely chop the onion, mince the garlic, and grate the ginger. Set aside.
  2. In a large skillet or saucepan, melt 2 tablespoons of unsalted butter over medium heat.
  3. Add the chopped onion and cook until softened, about 5 minutes. Stir in the garlic and ginger, cooking for another minute until fragrant.
  4. Sprinkle in the cumin, coriander, turmeric, paprika, and garam masala. Stir continuously for 30 seconds to toast the spices.
  5. Add the tomato paste and crushed tomatoes to the skillet. Stir well and let it simmer for 5 minutes to thicken slightly.
  6. Stir in the drained chickpeas, ensuring they’re fully coated in the sauce.
  7. Cover the skillet and let the chickpeas simmer for 15 minutes, stirring occasionally.
  8. Reduce the heat to low, then stir in the heavy cream. Let it simmer for another 5 minutes, allowing the flavors to meld.
  9. Add salt and pepper to taste. Garnish with fresh cilantro before serving.
