A quick and easy creamy green smoothie packed with spinach, banana, cottage cheese, and energy-boosting ingredients for a nutritious start to your day.

  • 2 cups fresh spinach leaves, packed
  • 1 medium ripe banana, peeled
  • ½ cup small-curd cottage cheese, preferably low-fat
  • 1 cup (240 ml) unsweetened almond milk
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon ground flaxseed
  • 1 teaspoon honey or maple syrup (optional)
  • ½ cup ice cubes

Instructions

  1. Rinse 2 cups of fresh spinach leaves thoroughly and pat dry. Peel one medium ripe banana and break it into chunks.
  2. Scoop ½ cup small-curd cottage cheese into your blender, followed by 1 cup (240 ml) of unsweetened almond milk.
  3. Pour in 1 tablespoon of freshly squeezed lemon juice and add 1 tablespoon of ground flaxseed.
  4. Add 1 teaspoon of honey or maple syrup if desired, depending on the banana’s ripeness. Toss in ½ cup of ice cubes.
  5. Secure the lid tightly and blend on high speed for 45-60 seconds or until the mixture is velvety smooth and uniformly green. Stop and scrape the sides once or twice with a spatula for even blending.
  6. If the smoothie is too thick, add a splash more almond milk; if not sweet enough, add a little more honey. Blend again for 10 seconds.
  7. Pour into your favorite glass or jar and enjoy immediately.

Notes

Do not skip the lemon juice as it brightens the flavors and reduces the ‘green’ taste. Use ripe bananas for best sweetness and creaminess. If blender struggles, soak spinach in warm water for 5 minutes before blending. Consume immediately for best flavor and nutrient retention. Store in airtight container in fridge up to 24 hours; shake well before drinking.
