  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream (or substitute half-and-half for a lighter version)
  • 4 cups baby spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • Pinch of nutmeg
  • Salt and pepper to taste
  • Optional: red pepper flakes, fresh basil for garnish
  • Optional: cooked chicken or crispy bacon for added protein

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions (usually about 2-3 minutes). The gnocchi will float to the top when done. Drain and set aside.
  2. In a large skillet over medium heat, melt the butter. Add the minced garlic and cook for 1-2 minutes until fragrant, stirring frequently to avoid burning.
  3. Pour in the heavy cream and stir well. Let it simmer for 2-3 minutes to thicken slightly. Add a pinch of nutmeg, salt, and pepper to taste.
  4. Toss in the fresh spinach leaves and stir until they wilt, about 2-3 minutes.
  5. Add the cooked gnocchi to the skillet and gently toss to coat them evenly in the sauce.
  6. Sprinkle the crumbled feta and grated Parmesan over the gnocchi. Stir gently until the cheeses melt into the sauce and everything is well combined. Adjust seasoning as needed.
  7. Remove from heat and serve immediately. Garnish with extra feta or Parmesan, and a sprinkle of red pepper flakes if desired.
