  • 2 tablespoons sweet pickle relish
  • 1/2 cup finely chopped celery
  • 2 tablespoons minced red onion

Instructions

  1. Bring a large pot of salted water to a boil. Add 2 cups (200g) elbow macaroni and cook according to package instructions, about 7-8 minutes for al dente. Drain and rinse under cold water to stop cooking. Set aside to fully cool (about 10-15 minutes).
  2. Place 4 large eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat, then remove from heat and cover. Let sit for 12 minutes. Drain and cool eggs in an ice bath for 5 minutes. Peel and chop into small pieces (around 1/4-inch dice). Set aside.
  3. In a medium bowl, combine 1/2 cup (120 ml) mayonnaise, 1 tablespoon Dijon mustard, 1 tablespoon apple cider vinegar, 2 tablespoons sweet pickle relish, 1/2 teaspoon smoked paprika, salt, and pepper to taste. Whisk until smooth and creamy. Taste and adjust seasoning if needed.
  4. In a large mixing bowl, add cooled macaroni, chopped eggs, 1/2 cup finely chopped celery, and 2 tablespoons minced red onion. Pour the dressing over and gently fold everything together using a silicone spatula, making sure not to break up the eggs too much.
  5. Cover the bowl and refrigerate for at least 1 hour to let the flavors marry.
  6. Before serving, give the salad a gentle stir and garnish with 2 tablespoons chopped fresh parsley. Add extra cracked pepper or paprika on top for presentation.
