  • 2 cups (480g) full-fat cottage cheese
  • 3 tablespoons (45ml) honey
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (240ml) heavy cream
  • 1 cup (150g) fresh raspberries
  • Powdered sugar (optional)
  • Mint leaves for garnish

Instructions

  1. In a blender or food processor, add cottage cheese, honey, and vanilla extract. Blend until completely smooth, about 2-3 minutes.
  2. In a mixing bowl, pour heavy cream and whip until soft peaks form, approximately 4-5 minutes.
  3. Gently fold the whipped cream into the blended cottage cheese mixture using a spatula.
  4. Wash fresh raspberries and pat them dry. Reserve a few raspberries for garnish.
  5. Layer the mousse and raspberries in serving glasses or bowls, alternating layers until the glass is full.
  6. Garnish with reserved raspberries and a sprig of fresh mint. Optionally, drizzle honey or powdered sugar on top.
  7. Chill the mousse in the refrigerator for at least 1 hour before serving.
