  • 1 cup small-curd cottage cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions. Drain and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly, until lightly golden.
  4. Gradually whisk in the milk, ensuring there are no lumps. Cook for 3-5 minutes, stirring frequently, until thickened.
  5. Reduce the heat to low and stir in the cottage cheese. If you prefer a smoother texture, blend the cottage cheese before adding it to the sauce.
  6. Add the shredded cheddar cheese a handful at a time, stirring until fully melted and creamy. Season with salt and pepper to taste.
  7. Combine the cooked pasta with the cheese sauce, mixing thoroughly. Transfer to a greased 9×13 baking dish.
  8. For an extra crispy topping, sprinkle breadcrumbs over the top. Bake for 15-20 minutes until bubbly and golden.
  9. Remove from the oven and let cool for a few minutes before serving.

Notes

Blend the cottage cheese for a smoother sauce. Slightly undercook the pasta as it will finish cooking in the oven. Freshly grate your cheese for better melting. Add breadcrumbs for a crunchy topping.
