  • 1 pound boneless, skinless chicken breasts (or chicken thighs)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 23 cloves fresh garlic, minced
  • 1 package (150g) Boursin cheese, Garlic & Herb flavor
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and sear for about 4-5 minutes per side, until golden brown. Remove the chicken and set aside.
  3. Lower the heat to medium and add 1 tablespoon of butter to the skillet. Once melted, stir in the minced garlic and cook for 1-2 minutes, until fragrant.
  4. Add the chicken broth and scrape up the browned bits from the bottom of the pan using a wooden spoon.
  5. Reduce the heat to low and stir in the Boursin cheese until fully melted and incorporated into the sauce.
  6. Pour in the heavy cream and whisk until the sauce is smooth and creamy. Taste and adjust seasoning, adding more salt and pepper if needed.
  7. Return the chicken to the skillet, spooning some of the sauce over the top. Cover and let simmer for 10-12 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C).
  8. Garnish with chopped parsley and serve hot alongside your favorite side dishes.
