A creamy, spicy buffalo chicken dip made in a slow cooker, perfect for parties and game nights. This dip balances tangy blue cheese with rich creaminess and a kick of buffalo heat.

Ingredients

Scale
  • 3 cups cooked shredded chicken (about 450 grams or 1 pound)
  • 1/2 cup buffalo wing sauce (120 ml)
  • 8 ounces cream cheese, softened (225 grams)
  • 1/2 cup sour cream (120 ml)
  • 1/4 cup mayonnaise (60 ml), optional
  • 1/2 cup blue cheese crumbles (75 grams)
  • 1 cup shredded cheddar cheese (115 grams)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Freshly cracked black pepper to taste
  • Optional garnish: chopped green onions or parsley

Instructions

  1. Prepare the chicken by shredding about 3 cups (450 grams) into bite-sized pieces and pat dry if needed.
  2. In a medium bowl, combine softened cream cheese, sour cream, and mayonnaise (if using). Whisk until smooth and creamy.
  3. Stir in buffalo wing sauce, garlic powder, onion powder, and freshly cracked black pepper to taste. Mix well.
  4. Fold in shredded chicken, blue cheese crumbles, and shredded cheddar cheese. Mix gently to combine.
  5. Transfer the mixture to the slow cooker insert, spreading evenly.
  6. Cook on LOW for 2 to 3 hours, stirring once halfway through, until bubbly and heated through. Alternatively, cook on HIGH for 1 to 1.5 hours, watching closely to prevent scorching.
  7. Just before serving, stir well and sprinkle extra blue cheese crumbles and chopped green onions or parsley on top.
  8. Serve warm with tortilla chips, celery sticks, carrot sticks, pita chips, or warm crusty bread.

Notes

Use softened cream cheese for smooth texture. Stir halfway through cooking to prevent sticking. Adjust buffalo sauce to taste for desired heat level. Avoid overcooking to prevent cheese separation. If dip is too thick after cooking, stir in a splash of milk or extra sour cream to loosen.
