A creamy, spicy buffalo chicken dip made effortlessly in the slow cooker, perfect for game day or casual gatherings. This dip combines tender shredded chicken, cream cheese, and buffalo sauce for a velvety, crowd-pleasing snack.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 450g)
  • 8 ounces cream cheese, softened (225g)
  • 1 cup buffalo sauce (240ml)
  • 1/2 cup ranch dressing (120ml)
  • 1 cup shredded cheddar cheese (115g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Shred about 3 cups (450g) of cooked chicken. Use rotisserie chicken or cook your own by poaching or baking until fully cooked.
  2. Soften 8 ounces (225g) of cream cheese by letting it sit at room temperature for about 30 minutes or microwave in 15-second bursts until soft but not melted.
  3. In a mixing bowl, combine softened cream cheese, 1 cup (240ml) buffalo sauce, 1/2 cup (120ml) ranch dressing, 1 teaspoon garlic powder, 1 teaspoon onion powder, and salt and pepper to taste. Stir until smooth and well combined.
  4. Fold in shredded chicken and 1 cup (115g) shredded cheddar cheese until evenly coated.
  5. Pour the mixture into the slow cooker insert and spread evenly. Cover with the lid.
  6. Cook on low for 3-4 hours or on high for 2 hours. Stir gently halfway through cooking to prevent sticking.
  7. Just before serving, sprinkle an extra 1/2 cup (60g) shredded cheddar cheese on top. Cover and let it melt for 5-10 minutes.
  8. Garnish with chopped green onions or a sprinkle of paprika and serve hot with tortilla chips, celery sticks, or sliced baguette.

Notes

Softening the cream cheese properly is key to avoid lumps. Stir the dip halfway through cooking to prevent burning and ensure even melting. Adjust buffalo sauce and ranch dressing to control spice level. For dairy-free versions, use dairy-free cream cheese, ranch alternatives, and vegan cheese. If no slow cooker is available, bake covered at 350°F (175°C) for 25-30 minutes, stirring halfway through.
