  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/4 cup grated Parmesan cheese (25 grams)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Pat chicken thighs dry with paper towels. Season both sides with salt, pepper, and dried Italian herbs. Let rest.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering (about 3 minutes).
  3. Add chicken thighs in a single layer without overcrowding. Sear for 5-6 minutes until golden and crisp on the bottom.
  4. Flip chicken and cook another 4-5 minutes until cooked through and internal temperature reaches 165°F (75°C). Remove chicken and tent with foil.
  5. Reduce heat to medium. Add minced garlic to the pan and sauté for 30 seconds until fragrant.
  6. Stir in chopped sun-dried tomatoes and cook for 1 minute to release flavors.
  7. Pour in chicken broth and scrape browned bits from pan. Simmer for 2 minutes to reduce slightly.
  8. Add heavy cream and grated Parmesan cheese. Simmer gently over low heat, stirring frequently, until sauce thickens (about 4-5 minutes).
  9. Return chicken to the pan, nestle into sauce, spoon sauce over, and warm together for 2-3 minutes. Adjust seasoning with salt and pepper.
  10. Garnish with chopped fresh basil or parsley before serving.

Notes

Use chicken broth without additives for gluten-free. Roasted red peppers can substitute sun-dried tomatoes but will alter flavor. If sauce thickens too much, whisk in more broth or cream. Avoid high heat to prevent cream splitting. Let chicken rest after searing to keep juicy.
