Creamy Baked Cranberry Brie Bites

These festive holiday appetizers feature creamy brie and tangy cranberry sauce tucked inside golden, flaky puff pastry. Quick to make and irresistibly delicious, they’re perfect for entertaining and guaranteed to be a crowd-pleaser.

  • 1 sheet puff pastry, thawed
  • Flour, for dusting
  • 1 large egg, beaten (for egg wash, optional)
  • 6 oz brie cheese, cut into 1/2-inch cubes (rind on or off)
  • 1/2 cup cranberry sauce (whole berry style preferred)
  • 1 tsp orange zest (optional, highly recommended)
  • 1/4 cup chopped pecans or walnuts (optional)
  • Fresh thyme leaves or rosemary, for garnish
  • Sea salt flakes, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly oil or spray muffin tin.
  2. Cube brie cheese into 1/2-inch pieces. Zest orange if using. Chop nuts if desired.
  3. On a lightly floured surface, roll out puff pastry to about 1/8-inch thick.
  4. Slice pastry into 12 equal squares for standard muffin tin (24 for mini tin).
  5. Press each pastry square gently into muffin tin wells, letting corners stick up.
  6. Add one cube of brie to each cup, followed by about 1 tsp cranberry sauce. Sprinkle orange zest and nuts if using.
  7. Lightly brush exposed pastry with beaten egg.
  8. Bake in center of oven for 12-15 minutes (mini bites may need just 10 minutes), until pastry is puffed and golden and brie is bubbling.
  9. Immediately sprinkle with fresh thyme or rosemary and a pinch of sea salt, if desired.
  10. Let bites cool in tin for 5 minutes, then transfer to wire rack.

Notes

Keep puff pastry cold for best results. Do not overfill cups to avoid overflow. For gluten-free, use gluten-free puff pastry. You can prepare ahead and bake just before serving. Leftovers reheat best in the oven, not microwave. Garnish with herbs for a festive look.
