  • 2 cups potatoes, peeled and diced

Instructions

  1. Prepare all ingredients: dice bacon, peel and dice potatoes, chop onion, and mince garlic.
  2. Cook diced bacon in a large pot or Dutch oven over medium heat until crispy, about 5-7 minutes. Remove bacon with a slotted spoon and set aside, leaving rendered fat in the pot.
  3. Add butter to the pot and let it melt. Add diced onion and cook for 3-4 minutes until softened and translucent. Stir in minced garlic and cook for another minute until fragrant.
  4. Sprinkle flour over the onion and garlic mixture, stirring constantly to create a roux. Cook for about 2 minutes to eliminate the raw flour taste.
  5. Gradually pour in chicken broth while stirring, ensuring there are no lumps. Add diced potatoes and bring the mixture to a gentle boil. Reduce heat to medium-low and simmer for 15-20 minutes, or until potatoes are tender.
  6. Once potatoes are cooked, stir in corn and thyme. Let chowder simmer for another 5 minutes.
  7. Season shrimp with a pinch of salt and pepper, then add them to the pot. Cook for 3-5 minutes, or until shrimp turn pink and opaque.
  8. Stir in heavy cream. Taste and adjust seasoning with more salt and pepper as needed. Allow chowder to gently simmer for an additional 2-3 minutes.
