  • 2 slices of sourdough or multigrain bread
  • 2 tablespoons crumbled feta cheese
  • 1/4 cup microgreens
  • 1 teaspoon fresh lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. Toast 2 slices of bread until golden and crisp, about 3-5 minutes in a toaster or under a broiler.
  2. Cut the avocado in half, remove the pit, and scoop out the flesh into a small bowl. Mash gently with a fork until smooth, leaving a few chunks for texture if desired.
  3. Add a squeeze of fresh lemon juice, a pinch of salt, and a dash of black pepper to the mashed avocado. Stir until well combined.
  4. Spread the seasoned avocado evenly onto the toasted bread slices using a spatula or the back of a spoon.
  5. Sprinkle a generous amount of crumbled feta cheese on top of the avocado layer.
  6. Top with a handful of fresh microgreens and drizzle a little olive oil on top if desired.
  7. Optional: Add red pepper flakes, hot sauce, a poached egg, or cherry tomatoes for extra flavor.
