A quick and easy twist on classic deviled eggs using creamy avocado and crunchy everything bagel seasoning for a fresh, flavorful bite perfect for brunch or parties.

  • 6 large eggs, hard-boiled, peeled, and halved
  • 1 medium ripe avocado, mashed until smooth
  • 2 tablespoons plain Greek yogurt (can substitute dairy-free coconut yogurt)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 teaspoons everything bagel seasoning
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Smoked paprika (optional, for garnish)
  • Pinch of chili flakes (optional, for heat)

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about 1 inch. Bring to a rolling boil over medium-high heat, then cover the pan, turn off the heat, and let sit for 12 minutes.
  2. Drain hot water and transfer eggs to an ice bath or run under cold water for at least 5 minutes. Gently tap each egg on the counter to crack the shell, then peel under running water if needed.
  3. Slice peeled eggs in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.
  4. Mash the yolks with the ripe avocado until smooth and creamy.
  5. Mix in Greek yogurt, fresh lemon juice, and Dijon mustard. Stir until silky and uniform. Season with sea salt and freshly ground black pepper to taste.
  6. Using a small spoon or piping bag, fill each egg white half with the avocado-yolk mixture, forming a generous mound.
  7. Sprinkle everything bagel seasoning evenly over the filled eggs. Add a light dusting of smoked paprika if desired.
  8. Refrigerate for at least 20 minutes before serving to let flavors meld. Serve chilled or at room temperature.

Notes

Use slightly older eggs for easier peeling. Toast everything bagel seasoning lightly for extra crunch and flavor. Chill filled eggs before serving to firm up the filling. Lemon juice prevents avocado browning. For a spicy kick, add chili flakes or sriracha. Greek yogurt can be swapped with sour cream in summer for silkier filling.
