  • 2 large eggs, room temperature
  • 1 ½ teaspoons pure vanilla extract
  • 2 cups (350 g) semi-sweet or dark chocolate chips
  • ½ cup (115 g) unsalted butter, softened (for frosting)
  • 2 cups (240 g) powdered sugar, sifted
  • 23 tablespoons heavy cream or whole milk
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips evenly with a spatula.
  7. Drop rounded balls of dough about 2 inches apart on the prepared baking sheets using a cookie scoop or tablespoon. Lightly flatten each ball with your fingers or the back of a spoon.
  8. Bake for 10-12 minutes until edges are golden but centers look slightly soft. They will firm up as they cool.
  9. Transfer cookies to a wire rack to cool completely before assembling.
  10. To make the frosting, beat the softened butter until creamy. Gradually add powdered sugar, mixing on low speed.
  11. Add heavy cream or milk, vanilla extract, and a pinch of salt. Beat on high speed for 3-5 minutes until light, fluffy, and spreadable. Adjust cream for desired softness.
  12. Spread a generous dollop of frosting on the flat side of half the cookies, then top with remaining cookies to create sandwiches. Press gently to spread the frosting evenly.
  13. Optional: Chill frosting if too soft to spread, and chill assembled sandwiches for 30 minutes before serving for easier handling.

Use room temperature butter and eggs for best texture. Do not overbake cookies; they should look slightly soft when removed from oven. Whip frosting on high speed for at least 4 minutes for fluffy texture. Chill assembled sandwiches for 30 minutes before serving to set frosting.
