Cozy White Bean Soup Recipe for Easy Comfort Meals

A warm and comforting white bean soup packed with creamy beans, tender veggies, and fragrant herbs, perfect for chilly evenings or meal prep.

  • 2 cans white beans (cannellini or Great Northern), rinsed and drained
  • 4 cups vegetable broth (low-sodium preferred)
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 yellow onion, diced finely
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 bay leaves
  • 3 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • Salt and black pepper, to taste
  • Optional: Parmesan cheese, for garnish
  • Optional: Fresh parsley, for garnish

Instructions

  1. Dice the carrots, celery, and onion. Mince the garlic. Rinse and drain the canned white beans.
  2. In a large pot or Dutch oven over medium heat, add the olive oil and let it warm for about 30 seconds.
  3. Add the diced onion, carrot, and celery to the pot. Cook for 5-7 minutes until softened, stirring occasionally.
  4. Stir in the minced garlic, bay leaves, and thyme. Cook for 1 minute until fragrant.
  5. Add the rinsed white beans and vegetable broth to the pot. Stir well to combine.
  6. Bring the soup to a simmer over medium-high heat, then reduce the heat to low. Let it simmer uncovered for 20-25 minutes, stirring occasionally.
  7. Taste the soup and season with salt and black pepper as needed.
  8. Discard the bay leaves and thyme sprigs before serving.
  9. Ladle the soup into bowls and garnish with parsley and Parmesan cheese, if desired.

Notes

For a thicker soup, mash some of the beans before adding them to the pot or use an immersion blender to puree part of the soup. Fresh herbs elevate the flavor, and the soup tastes even better after a day or two.
