  • 1 lb Italian sausage (mild or spicy)
  • 12 oz cheese tortellini (fresh or frozen)
  • 4 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups fresh baby spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add Italian sausage and cook until browned, breaking it up into smaller pieces as it cooks. Remove the sausage and set it aside.
  2. In the same pot, sauté diced onion until softened, about 3-4 minutes. Add minced garlic and cook for another 30 seconds, stirring often to prevent burning.
  3. Pour in chicken broth and bring it to a gentle boil. Scrape up any browned bits stuck to the bottom of the pot for extra flavor.
  4. Add cheese tortellini to the pot and cook according to the package instructions, usually around 5-7 minutes. Stir occasionally to prevent sticking.
  5. Lower the heat and stir in heavy cream. Let the soup simmer for 2-3 minutes, allowing the flavors to meld together.
  6. Return the cooked sausage to the pot, along with fresh spinach. Stir until the spinach wilts, about 1-2 minutes.
  7. Season with salt, pepper, and crushed red pepper flakes (if using). Taste and adjust seasonings as needed.
  8. Serve warm with crusty bread or a sprinkle of grated Parmesan on top.
