A hearty and comforting chicken wild rice soup made in a slow cooker, perfect for chilly winter days.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup wild rice
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth (low-sodium or homemade)
  • 1 cup heavy cream (or half-and-half or dairy-free alternative)
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: mushrooms, spinach, fresh parsley

Instructions

  1. Prepare your ingredients: Dice the chicken, peel and chop the vegetables, and measure out the rice and seasonings.
  2. Add to the slow cooker: Place the chicken, wild rice, carrots, celery, onion, and garlic into the slow cooker.
  3. Pour in the broth: Add the chicken broth, ensuring the ingredients are submerged. Stir to combine.
  4. Season: Add the dried thyme, bay leaf, salt, and pepper. Stir gently.
  5. Cook: Cover and set the slow cooker to low heat. Let it cook for 6-8 hours, or until the rice is tender and the chicken is fully cooked.
  6. Finish with cream: During the last 30 minutes of cooking, stir in the heavy cream and butter. Let it heat through.
  7. Check the seasoning: Taste the soup and adjust with additional salt and pepper if needed.
  8. Serve: Remove the bay leaf, ladle into bowls, and garnish with fresh parsley or a sprinkle of cracked black pepper.
