Cozy Sausage and Orzo Soup

A hearty and comforting soup featuring tender orzo, savory sausage, and a flavorful broth, perfect for chilly fall nights.

  • 1 lb Italian sausage (mild or spicy, casing removed if using links)
  • 1 cup orzo pasta
  • 6 cups chicken broth (low sodium preferred)
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium onion, finely diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, finely chopped (for garnish)

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Add the sausage, breaking it into small pieces with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes. Remove from the pot and set aside.
  2. In the same pot, add another tablespoon of olive oil. Toss in the diced onion, carrots, and celery. Cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Pour in the chicken broth and crushed tomatoes. Stir well, scraping up any browned bits from the bottom of the pot for extra flavor.
  4. Stir in the orzo and bring the soup to a simmer. Cook for 8-10 minutes, stirring occasionally, until the pasta is tender.
  5. Add the cooked sausage back to the pot, followed by the fresh spinach. Stir until the spinach is wilted, about 2 minutes.
  6. Taste and adjust the seasoning with salt and pepper. Garnish with fresh parsley and a sprinkle of Parmesan if desired. Serve hot!

Notes

If the soup thickens too much while simmering, add a splash of chicken broth to thin it out. Frozen spinach can be used in place of fresh spinach, but fresh provides better texture and color.
