Cozy Rotisserie Chicken Stuffing Casserole

A hearty and comforting casserole made with rotisserie chicken, stuffing, and creamy sauce. Perfect for busy weeknights or cozy family dinners.

  • 3 cups shredded rotisserie chicken (about one medium chicken)
  • 1 (6-ounce) package stuffing mix
  • 2 cups chicken broth (low-sodium recommended)
  • 1 cup chopped celery
  • 1 cup diced onion
  • 2 (10.5-ounce) cans cream of chicken soup (or cream of mushroom for a twist)
  • 1 cup sour cream
  • 1/4 cup melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. In a large mixing bowl, combine the stuffing mix with 2 cups of chicken broth. Stir until the stuffing is evenly moistened, then set aside to allow it to absorb the liquid.
  3. In a medium skillet, heat a small amount of oil over medium heat. Add the chopped celery and onion, and sauté for 4-5 minutes until softened and fragrant. Remove from heat.
  4. In another large bowl, mix the shredded rotisserie chicken, sautéed celery and onion, cream of chicken soup, sour cream, and a pinch of salt and pepper. Stir until well combined.
  5. Spread the chicken mixture evenly into the prepared baking dish, smoothing the top with a spatula.
  6. Gently spoon the moistened stuffing over the chicken mixture, covering it completely.
  7. Drizzle the melted butter evenly over the stuffing layer to help it crisp and brown beautifully.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbling around the edges. (Tip: If the top starts browning too quickly, cover lightly with aluminum foil.)
  9. Remove the casserole from the oven and let it cool for 5-10 minutes before serving.
