  • 2 cups pumpkin puree
  • 4 cups chicken broth, low-sodium

  • 1 medium onion, diced
  • 2 medium carrots, sliced thinly
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Sauté for 5-7 minutes until softened and fragrant.
  3. Stir in the pumpkin puree, followed by the chicken broth. Mix well to combine.
  4. Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for 10 minutes, stirring occasionally.
  5. Season with cinnamon, nutmeg, smoked paprika, and salt. Taste and adjust the spices as needed.
  6. Add the shredded chicken and cook for another 5 minutes to heat through.
  7. Stir in the heavy cream and whisk until fully incorporated. Allow the soup to simmer for 2-3 more minutes.
  8. Remove from heat and garnish with fresh parsley if desired.
  9. Serve hot with crusty bread or crackers on the side.
