  • ¼ cup (57 g) unsalted butter, browned
  • ⅓ cup (65 g) granulated sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or non-stick spray. Optionally line with parchment paper for easy removal.
  2. Brown the butter: In a small skillet over medium heat, melt ¼ cup unsalted butter. Swirl gently until golden brown specks appear and a nutty aroma develops (about 4-5 minutes). Remove from heat and let cool slightly.
  3. Mix dry ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  4. Combine wet ingredients: In another bowl, mash bananas until smooth. Add pumpkin puree, granulated sugar, brown sugar, eggs, melted butter, and vanilla extract. Whisk until fully combined.
  5. Fold wet into dry: Pour wet mixture into dry ingredients. Gently fold with a spatula until just combined, avoiding overmixing.
  6. Prepare the crust: In a small bowl, mix the cooled browned butter with granulated sugar and cinnamon until crumbly.
  7. Transfer batter to the pan and smooth the top lightly.

  9. Bake for 55-65 minutes, starting to check at 55 minutes with a toothpick. It should come out with a few moist crumbs. If needed, bake an additional 5-10 minutes but watch to prevent burning.
  10. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Use very ripe bananas for maximum sweetness. Brown butter carefully over medium heat to avoid burning. Tent the loaf with foil if the crust browns too fast. For gluten-free, substitute flour with a gluten-free blend including xanthan gum. For dairy-free, replace butter with coconut oil but expect a different crust texture.
