A quick and easy peach cobbler with a flaky biscuit topping and creamy vanilla ice cream, perfect for a comforting homemade dessert.

Ingredients

Scale
  • 4 cups canned peaches, drained (or fresh peaches, peeled and sliced – about 5 medium peaches)
  • 1/2 cup granulated sugar (adjust to taste based on peach sweetness)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cut into small pieces
  • 1/2 cup whole milk (or dairy-free milk if needed)
  • 1 teaspoon vanilla extract
  • Creamy vanilla ice cream (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the drained peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir gently until peaches are evenly coated and the mixture slightly thickens.
  3. Transfer the peach filling into your baking dish and spread it out evenly without pressing down.
  4. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold butter pieces and use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized bits of butter remaining.
  5. Add the milk and vanilla extract to the topping mixture and stir gently just until combined.
  6. Drop spoonfuls of the topping over the peach filling, aiming for a rustic, uneven look.
  7. Bake at 350°F (175°C) for 40-45 minutes until the topping is golden brown and peach juices are bubbling. If the top browns too quickly, loosely cover with foil halfway through baking.
  8. Let the cobbler cool for about 10 minutes before serving warm with a scoop of creamy vanilla ice cream.

Notes

Keep butter cold to ensure a flaky topping. Do not overmix the batter to avoid toughness. Let the cobbler rest after baking to thicken the filling. Use fresh peaches in season for a brighter flavor. For gluten-free or dairy-free versions, substitute almond flour and coconut oil, and use plant-based milk.
