  • 2 1/3 cups (280g) all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened
  • 1 1/2 cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (50g) granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. Whisk together the flour, cream of tartar, baking soda, and salt in a medium bowl.
  3. Using an electric mixer, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, followed by the vanilla extract, scraping down the sides as needed.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed just until combined.
  6. In a small bowl, mix the granulated sugar and ground cinnamon together for the coating.
  7. Using a cookie scoop or tablespoon, portion out dough balls about 1.5 inches in diameter. Roll each ball generously in the cinnamon sugar mixture.
  8. Place the coated dough balls about 2 inches apart on the baking sheets.
  9. Bake for 8–10 minutes or until edges are set but centers still look soft.
  10. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overbake to keep cookies soft. Store in an airtight container with a slice of bread to maintain moisture. Dough can be chilled for 15 minutes if sticky. Rotate baking sheets halfway through baking for even cooking. For gluten-free, use a 1:1 gluten-free baking blend. For vegan, substitute butter with coconut oil and eggs with flax eggs.
