  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ¼ tsp ground cloves
  • ½ cup (100g) brown sugar, packed
  • ¼ cup (60ml) molasses (unsulfured is best for flavor)
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs
  • ½ cup (120ml) buttermilk (or substitute with milk + 1 tsp vinegar)
  • 1 tsp vanilla extract
  • 1 cup (120g) powdered sugar
  • 23 tbsp milk (adjust for desired consistency)
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves. Set aside.
  3. In a large bowl, combine the brown sugar, molasses, vegetable oil, and eggs. Whisk until smooth.
  4. Add the buttermilk and vanilla extract to the wet mixture and stir until well combined.
  5. Gradually add the dry ingredients to the wet mixture. Stir gently with a spatula until just combined—don’t overmix.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the muffins from the oven and transfer them to a cooling rack. Let them cool completely before glazing.
  9. For the glaze, whisk together powdered sugar, milk, and vanilla extract in a small bowl. Adjust the milk as needed to achieve a drizzling consistency.
  10. Drizzle the glaze over the cooled muffins and let it set for 10 minutes. Enjoy!
