  • 2 pounds beef chuck roast, cut into bite-sized cubes
  • 2 cups potatoes, peeled and cut into chunks
  • 2 cups carrots, peeled and sliced into rounds
  • 1 cup celery, sliced thin
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1/4 cup flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cut the chuck roast into bite-sized cubes, trimming excess fat. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Dredge the beef cubes lightly in flour and sear them until browned on all sides, about 4-5 minutes per batch.
  3. Transfer the seared beef to the crockpot.
  4. In the same skillet, sauté the diced onion and minced garlic until fragrant, about 2 minutes. Add the tomato paste and stir to combine. Cook for another minute, then scrape everything into the crockpot.
  5. Add the potatoes, carrots, celery, and canned diced tomatoes to the crockpot.
  6. Pour in the beef broth and Worcestershire sauce, and give everything a good stir.
  7. Add the bay leaves, then cover the crockpot with its lid. Cook on low for 8 hours or high for 4-5 hours.
  8. Before serving, remove the bay leaves and taste the stew. Adjust the seasoning with more salt and pepper if needed.
  9. Serve warm with a sprinkle of fresh parsley, if desired.
