  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ¾ cup (180 ml) buttermilk (or milk + 1 tsp vinegar)
  • 2 cups diced fresh peaches (about 2 large peaches), peeled and diced
  • 1 tbsp fresh lemon juice
  • ½ cup (60 g) all-purpose flour (for streusel)
  • ⅓ cup (65 g) brown sugar, packed (for streusel)
  • 3 tbsp (42 g) cold unsalted butter, cut into small cubes (for streusel)
  • ½ tsp ground cinnamon (for streusel)
  • Pinch of salt (for streusel)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup.
  2. In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and 1 tsp cinnamon. Set aside.
  3. Peel and dice peaches into small pieces. Toss with 1 tbsp lemon juice to prevent browning. Set aside.
  4. In a small bowl, combine ½ cup flour, ⅓ cup brown sugar, ½ tsp cinnamon, and a pinch of salt. Add cold butter cubes and use a pastry cutter or two forks to mix until coarse crumbs form. Refrigerate.
  5. In a large bowl, whisk melted butter and ¾ cup brown sugar until smooth. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  6. Pour in buttermilk and mix gently until combined.
  7. Add dry ingredients to wet mixture in two additions, folding gently after each until just combined.
  8. Carefully fold lemon-coated peaches into the batter.
  9. Spoon batter into muffin cups, filling about ¾ full.
  10. Sprinkle chilled streusel topping evenly over each muffin.
  11. Bake for 20 to 25 minutes until a toothpick inserted comes out clean and tops are golden brown. Tent with foil if streusel browns too fast.
  12. Cool muffins in pan for 5 minutes, then transfer to wire rack to cool completely.

Notes

Use fresh or properly thawed peaches to avoid excess moisture. Keep butter cold for the streusel to ensure a crunchy topping. Do not overmix the batter to keep muffins tender. You can prepare the streusel a day ahead and refrigerate. For extra flavor, sprinkle flaky sea salt on streusel before baking.
