Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside. Mash the ripe bananas in a large bowl until smooth but still a bit chunky (about 1 cup).
  2. Add the melted butter, granulated sugar, and eggs to the mashed bananas. Stir well with a spatula or whisk until fully combined. Mix in the vanilla extract.
  3. In a separate bowl, sift together the all-purpose flour, baking soda, salt, and cinnamon. Slowly fold the dry mix into the wet ingredients using a spatula, mixing just until combined. Be careful not to overmix.
  4. In a medium bowl, beat the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy, about 2-3 minutes with an electric mixer on medium speed.
  5. Pour half of the banana batter into the prepared loaf pan, spreading evenly. Dollop half of the cream cheese mixture over the batter in small spoonfuls. Use a skewer or butter knife to gently swirl the cream cheese through the batter, creating a marbled effect. Repeat with the remaining banana batter and cream cheese mixture, swirling again carefully.
  6. Bake for 55–65 minutes. Check doneness by inserting a toothpick into the center; it should come out mostly clean with a few moist crumbs. If the cream cheese near the top browns too quickly, loosely cover the loaf with foil halfway through baking.
  7. Let the banana bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use ripe bananas with brown spots for natural sweetness. Soften cream cheese to room temperature before mixing to avoid lumps. Gently swirl cream cheese to create distinct pockets. If batter is too thick, add a tablespoon of milk. Rotate pan halfway through baking for even color. For gluten-free, substitute flour with almond flour or gluten-free blend.
