  • 2 cups apples (peeled, cored, and diced)
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and a pinch of salt.
  2. In a separate bowl, combine the milk, eggs, and vanilla extract. Gradually pour the wet ingredients into the dry mixture, stirring until a thick batter forms.
  3. Fold in the diced apples until they’re evenly distributed throughout the batter.
  4. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 375°F (190°C). Use a thermometer to ensure the oil is at the right temperature.
  5. Using a spoon or small scoop, carefully drop dollops of batter into the hot oil. Fry the fritters in batches to avoid overcrowding.
  6. Cook each fritter for about 2-3 minutes per side, or until golden brown and crispy. Flip them halfway through for even cooking.
  7. Remove the fritters with a slotted spoon and place them on paper towels to drain excess oil.
  8. If desired, dust the fritters with powdered sugar or drizzle with a simple glaze made from powdered sugar and milk.
