  • 1 cup white chocolate chips, divided

  • 1 teaspoon pure vanilla extract (optional)
  • Pinch of sea salt (optional)
  • Nonstick spray or extra butter for greasing pan

Instructions

  1. Line a 9×13-inch baking pan with parchment or wax paper and lightly grease.
  2. In a large saucepan over medium heat, melt butter until foaming.
  3. Add mini marshmallows and stir constantly until melted and smooth (about 2-3 minutes).
  4. Add 1/2 cup white chocolate chips to the marshmallow mixture and stir until melted and silky. Stir in vanilla and sea salt, if using.
  5. Remove pan from heat. Add rice cereal and fold gently until evenly coated.
  6. Fold in 1/4 cup sprinkles, reserving the rest for topping.
  7. Transfer mixture to prepared pan and press evenly with wax paper or a buttered spatula.
  8. Melt remaining 1/2 cup white chocolate chips in a microwave-safe bowl in 20-second bursts, stirring until smooth.
  9. Drizzle melted white chocolate over pressed treats and scatter remaining sprinkles on top.
  10. Let set at room temperature for 30 minutes (or refrigerate for 15 minutes).
  11. Lift treats out of pan and cut into squares with a sharp knife or pizza cutter.

Use fresh marshmallows for best texture. Melt white chocolate in short microwave bursts to avoid burning. For gluten-free or vegan adaptations, use certified gluten-free cereal and sprinkles, vegan butter, and dairy-free white chocolate.
