  • 1/4 cup (60ml) ice-cold water
  • 1/4 teaspoon salt
  • 1 cup (200g) light corn syrup
  • 1 cup (200g) brown sugar
  • 1/4 cup (60g) unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup (175g) semisweet chocolate chips
  • 1 1/2 cups (150g) pecan halves

Instructions

  1. Combine the flour and salt in a mixing bowl. Cut in the cold butter using a pastry cutter or forks until the mixture resembles coarse crumbs. Gradually add ice-cold water, one tablespoon at a time, mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  2. Preheat your oven to 350°F (175°C).
  3. On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to a 9-inch pie pan, pressing it gently into the bottom and sides. Trim any excess overhang and crimp the edges as desired.
  4. In a large mixing bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until smooth. Stir in the chocolate chips and pecan halves.
  5. Pour the filling into the prepared crust, spreading it evenly. Arrange a few extra pecan halves on top for decoration if you like.
  6. Place the pie in the preheated oven and bake for 50-60 minutes, or until the filling is set and slightly puffed. The center should still have a slight jiggle but not be liquid.
