Cheesy Meatball Subs

These cheesy meatball subs combine tender homemade meatballs, rich marinara sauce, and gooey melted cheese on toasted sub rolls for the ultimate comfort food experience.

  • 1 pound (450g) ground beef
  • 1/4 cup (30g) breadcrumbs
  • 1 egg
  • 1/4 cup (20g) Parmesan cheese, freshly grated
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 cups (475ml) marinara sauce
  • 1 cup (120g) shredded mozzarella cheese
  • 4 sturdy sub rolls
  • Olive oil, for brushing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan cheese, garlic, Italian seasoning, salt, and pepper. Mix until evenly combined.
  3. Roll the mixture into golf ball-sized meatballs (about 12 meatballs).
  4. Place the meatballs on a greased baking sheet and bake for 15 minutes or until browned.
  5. Heat marinara sauce in a skillet over medium heat. Add the baked meatballs and simmer for 10 minutes, stirring occasionally.
  6. Slice the sub rolls in half and brush the insides with olive oil. Toast them in the oven for 5 minutes.
  7. Place 3 meatballs on each roll, spoon over marinara sauce, and top with shredded mozzarella cheese.
  8. Return the assembled subs to the oven and broil for 2-3 minutes or until the cheese is bubbly and golden.
  9. Remove from the oven, garnish with parsley if desired, and serve hot.
