  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup caramel bits
  • 1 cup dried apple pieces, diced small

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes). Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Don’t overmix! Fold in the oats, caramel bits, and diced dried apples using a spatula.
  5. Use a cookie scoop or tablespoon to drop rounded dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked (they’ll firm up as they cool).
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 15 minutes if your kitchen is warm to prevent spreading. Use soft caramel bits for gooey pockets of sweetness. For a nutty twist, add ½ cup of chopped walnuts or pecans.
