  • 1 medium butternut squash, peeled, seeded, and cubed (about 2 cups)
  • 1 ½ cups all-purpose flour, plus extra for dusting the surface
  • 1 large egg, lightly beaten
  • ½ cup grated Parmesan cheese
  • Salt, to taste
  • 1 pound Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon ground nutmeg
  • Fresh sage leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until fork-tender.
  2. Let the roasted squash cool slightly, then mash it with a potato masher or blend in a food processor until smooth. Set aside to cool completely.
  3. In a large mixing bowl, combine cooled squash puree, beaten egg, ½ cup Parmesan, and a pinch of salt. Gradually add flour until you have a soft dough that’s slightly sticky but holds together. Avoid overmixing.
  4. Transfer the dough to a floured surface. Divide into four portions and roll each into a long rope about ¾-inch in diameter. Cut into 1-inch pieces and roll each piece over the tines of a fork to create ridges.
  5. Bring a large pot of salted water to a gentle boil. Drop the gnocchi in batches, stirring occasionally. When they float to the surface (about 2-3 minutes), use a slotted spoon to transfer them to a plate lined with paper towels.
  6. Heat olive oil in a large skillet over medium heat. Add sausage, breaking it into small pieces as it cooks. Cook until browned and fully cooked, then remove from the skillet and set aside.
  7. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Pour in heavy cream and stir in Parmesan cheese. Add ground nutmeg and season with salt and pepper to taste.
  8. Gently toss cooked gnocchi and sausage in the sauce to coat evenly. Add fresh sage leaves for garnish if desired.
  9. Serve warm, sprinkled with extra Parmesan cheese.

Notes

Avoid overmixing the gnocchi dough to keep it light and fluffy. Test one gnocchi piece before cooking the entire batch to ensure it holds its shape. Freeze uncooked gnocchi for easy meal prep.
