  • 1/2 cup heavy cream
  • 3 large eggs
  • 1/4 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 pie crust (homemade or store-bought)

Instructions

  1. Preheat your oven to 350°F (175°C). Roll out your pie crust and fit it into your pie dish. Chill the crust while you prepare the filling.
  2. In a medium saucepan over medium heat, cook the honey, stirring occasionally, until it turns a deep amber color and smells slightly smoky (about 5–7 minutes). Remove from heat.
  3. Stir the unsalted butter into the hot honey until fully melted. Let the mixture cool for 5 minutes.
  4. In a mixing bowl, whisk together the eggs, sugar, heavy cream, vanilla extract, and salt. Slowly pour in the cooled honey mixture, whisking constantly to combine.
  5. Pour the filling into the prepared pie crust. Place the pie dish on a baking sheet to catch any spills.
  6. Bake the pie for 35–40 minutes, or until the filling is set but still slightly jiggly in the center. The edges should be golden brown.
  7. Allow the pie to cool completely on a cooling rack, then refrigerate for at least 2 hours before serving.
