Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 3 tbsp unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a small mixing bowl, combine brown sugar, flour, and cinnamon for the streusel topping. Add softened butter and mix until crumbly. Set aside.
  3. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. In a separate bowl, whisk together pumpkin puree, oil, eggs, milk, and vanilla extract until smooth.
  5. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
  6. Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
  7. Sprinkle the streusel topping evenly over the batter, pressing it gently to adhere.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely.
  10. Slice and enjoy warm or at room temperature.

Notes

[‘Don’t overmix the batter to avoid a dense texture.’, ‘Using room temperature eggs helps the batter mix more evenly.’, ‘If the top is browning too quickly, cover the loaf lightly with foil and continue baking.’, ‘Cooling the bread allows the flavors to settle and makes slicing easier.’]
