  • 8 oz cream cheese, softened
  • 68 slices deli turkey (about 68 slices per batch)
  • 46 slices cheese (provolone, Swiss, cheddar, or mozzarella)
  • Salt and pepper to taste (optional)
  • Optional add-ins: fresh spinach leaves, thinly sliced bell peppers, shredded carrots, or cucumber strips

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 20 minutes or microwaving on low for 10-15 seconds.
  2. Lay one flour tortilla flat on a cutting board. If cold, warm in the microwave for 10 seconds to prevent cracking.
  3. Spread a thin, even layer of cream cheese over the entire tortilla, leaving a half-inch border. Use about 2 tablespoons per tortilla.
  4. Sprinkle a tiny pinch of salt and a few cracks of black pepper over the cream cheese (optional).
  5. Place 2-3 slices of turkey flat on top of the cream cheese, overlapping slightly to cover most of the tortilla.
  6. Lay 1-2 slices of cheese on top of the turkey, keeping it even and avoiding overlapping too much.
  7. If using veggies, add a thin layer on top of the cheese. Do not overstuff.
  8. Starting from one edge, roll the tortilla tightly without tearing, using fingers to keep filling tucked in. Press down gently to seal the seam.
  9. Tightly wrap the rolled tortilla in plastic wrap, twisting the ends like a candy wrapper.
  10. Chill in the refrigerator for at least 30 minutes to firm up the cream cheese.
  11. After chilling, unwrap and place on a cutting board. Using a sharp serrated knife, slice into 1-inch rounds using a gentle sawing motion.
  12. Optional: Insert a toothpick through the center of each pinwheel to keep it from unrolling, especially for lunchboxes.
