  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Peel and dice the apples into small chunks. Set them aside.
  3. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  4. In a medium bowl, whisk the eggs, milk, and vanilla extract until smooth.
  5. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing.
  6. Fold the diced apples into the dough using a spatula, ensuring they’re evenly distributed.
  7. Using an ice cream scoop or spoon, drop mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted in the center comes out clean.
  9. Let the fritters cool slightly before dusting them generously with powdered sugar.

Notes

Avoid overmixing the dough to keep the fritters light and fluffy. Adjust sweetness based on the tartness of your apples.
