  • Store-bought potato gnocchi or homemade gnocchi
  • Sharp cheddar cheese, shredded
  • Heavy cream
  • Chicken broth
  • Fresh garlic cloves, minced
  • 1 small yellow onion, diced finely
  • Unsalted butter
  • All-purpose flour
  • Salt and pepper
  • Optional garnishes: fresh parsley or chives

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.
  2. Add the diced onion and minced garlic to the pot and sauté until softened and fragrant, about 2-3 minutes.
  3. Melt the butter in the pot, then whisk in the flour until it forms a smooth paste. Cook for 1-2 minutes to eliminate the raw flour taste.
  4. Slowly pour in the chicken broth, whisking constantly to avoid lumps. Bring to a simmer.
  5. Stir in the heavy cream and bring the mixture back to a gentle simmer.
  6. Toss in the gnocchi and let it cook for 3-5 minutes, or until tender and floating.
  7. Lower the heat and stir in the shredded cheddar cheese until melted and fully incorporated.
  8. Add salt and pepper to taste. Serve the soup topped with crispy bacon bits and optional parsley or chives.
