  • 12 oz penne or rigatoni pasta
  • 1 medium butternut squash, peeled and cubed
  • 1 lb Italian sausage (sweet or spicy, casings removed)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp fresh sage (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the cubed butternut squash with olive oil, salt, and pepper. Spread it out on the baking sheet and roast for 20-25 minutes, until tender and slightly caramelized.
  3. While the squash is roasting, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  4. Heat a large skillet over medium-high heat. Add the sausage and cook until browned and crumbled, about 6-8 minutes. Remove and set aside.
  5. In the same skillet, add a drizzle of olive oil and sauté the minced garlic for 1 minute, until fragrant.
  6. Stir in the chicken broth and heavy cream, scraping up any browned bits from the skillet. Let it simmer for 5 minutes until slightly thickened.
  7. Add the cooked sausage, roasted squash, and drained pasta to the skillet. Toss everything together to coat in the creamy sauce.
  8. Sprinkle in freshly grated Parmesan and stir until melted. Taste and adjust seasoning with salt and pepper.
  9. Garnish with fresh sage leaves if desired, and serve warm.
