  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups apples, peeled and diced (Granny Smith or Honeycrisp recommended)
  • Cinnamon sugar (2 tablespoons granulated sugar + 1 teaspoon ground cinnamon for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the eggs one at a time, followed by the vanilla extract. Beat until fully combined.
  4. In a separate bowl, whisk together the flour, cinnamon, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.
  6. Gently stir in the diced apples until evenly distributed throughout the batter.
  7. Transfer the batter to your prepared pan and use a spatula to spread it into an even layer.
  8. Sprinkle an even layer of cinnamon sugar over the batter.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden and slightly crisp.
  10. Allow the bars to cool completely in the pan before slicing into squares.

Use room-temperature ingredients for better texture. Dice apples evenly for consistent cooking. Let the bars cool completely before slicing to prevent crumbling.
