  • 1 tsp baking powder

  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil (or melted coconut oil)
  • 2 large eggs, room temperature
  • ¾ cup (180g) pumpkin puree (not pumpkin pie filling)
  • 1 medium apple, peeled and diced (about 1 cup)
  • 1 tsp vanilla extract
  • ½ cup (60g) all-purpose flour (for streusel topping)
  • ¼ cup (50g) brown sugar
  • ¼ tsp ground cinnamon
  • 3 tbsp (45g) unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, whisk the sugar, oil, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Gently stir the diced apples into the wet mixture.
  5. Add the wet ingredients to the dry ingredients. Use a spatula to fold everything together until just combined—don’t overmix.
  6. In a small bowl, combine the flour, brown sugar, and cinnamon for the streusel topping. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  7. Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle the streusel topping generously over each muffin.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Don’t overmix the batter to avoid dense muffins. Use room temperature eggs for better rise. Dice apples finely to ensure even cooking. Tent muffins with foil if streusel browns too quickly.
