  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups apples, peeled, cored, and diced

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Peel, core, and dice the apples into small pieces. Set aside.
  3. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a separate bowl, whisk the melted butter, eggs, vanilla extract, and milk until smooth.
  5. Gradually add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples gently.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

For a golden, slightly crisp top, sprinkle coarse sugar on the batter before baking. Avoid overmixing to ensure light and fluffy muffins.
