  • 1/2 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 egg, room temperature
  • 1/4 cup apple cider reduction
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened (for filling)
  • 4 oz cream cheese, softened
  • 2 cups powdered sugar
  • 2 tbsp apple cider reduction (for filling)
  • 1/2 tsp vanilla extract (for filling)
  • 1 cup apple cider (for reduction)

Instructions

  1. Pour 1 cup of apple cider into a saucepan and simmer over medium heat until it reduces to about 1/4 cup (15–20 minutes). Let it cool completely.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a separate mixing bowl, cream the softened butter and brown sugar together until light and fluffy. Add the egg, vanilla extract, and cooled apple cider reduction, mixing until fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Use a cookie scoop or tablespoon to drop dough onto the sheets, spaced about 2 inches apart. Bake for 10–12 minutes, or until the cookies are set and lightly golden. Let them cool completely on a wire rack.
  6. Using a mixer, beat the butter and cream cheese until smooth. Add the powdered sugar, apple cider reduction, and vanilla extract, mixing until fluffy.
  7. Once cookies are fully cooled, spread or pipe filling onto the flat side of one cookie and sandwich with another. Repeat until all cookies are paired.
