  • 1 cup apple cider (reduced to ¼ cup)
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 20 soft caramels, unwrapped

Instructions

  1. Pour 1 cup of apple cider into a small saucepan and simmer over medium heat until reduced to about ¼ cup (10–15 minutes). Set aside to cool.
  2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  3. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until smooth and fluffy (2–3 minutes).
  4. Beat in the eggs one at a time, followed by the vanilla extract and reduced apple cider.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Take about 2 tablespoons of dough and flatten it slightly in your hand. Place a caramel in the center and wrap the dough around it, sealing the edges. Roll gently into a ball.
  7. Place the dough balls onto the prepared baking sheet, leaving about 2 inches between each cookie. Bake for 12–14 minutes, or until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Seal the caramel tightly in the dough to prevent leaks during baking. Chill the dough for 30 minutes if your kitchen is warm to prevent spreading.
