  • 1/2 cup apple butter (homemade or store-bought)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup chicken or vegetable broth

Instructions

  1. Season the pork chops generously with salt and pepper on both sides. Let them sit for 5 minutes to absorb the seasoning.
  2. In a small bowl, whisk together the apple butter, apple cider vinegar, Dijon mustard, and ground cinnamon until smooth.
  3. Heat a cast iron skillet over medium-high heat. Add 2 tablespoons of olive oil and let it shimmer.
  4. Add the pork chops to the skillet and cook for 3-4 minutes per side until golden brown. Remove and set aside.
  5. Reduce the heat to medium and pour in the broth to deglaze the skillet, scraping up any browned bits.
  6. Stir the apple butter mixture into the broth and simmer for 2 minutes until thickened.
  7. Place the pork chops back into the skillet, spooning the glaze over them. Cook for another 3-5 minutes, flipping once, until the internal temperature reaches 145°F (63°C).
  8. Remove the pork chops from the skillet and let them rest for 3 minutes before serving. Spoon more glaze on top and garnish with fresh thyme if desired.
